Flavor of the Month....Trains, Plains and Automobiles

Anybody need some transportation? You have your choice of Trains, Planes or Automobiles.

The train and car are red velvet cake with Raspberry Buttercream then covered in Fondant. The plain is actually a plane mold pan that i have, and it's flavor is butterscotch cake with raspberry buttercream as well.

One thing I've learned I'm not very good at sculpting cakes, but that will take some time to figure out.
Red Velvet Cake
Whisk together until thoroughly blended:
2 1/3 cups sifted cake flour
1 1/2 teaspoons baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
1 teaspoon unsweetened cocoa powder
Beat in a large bowl until creamy
3/4 cup unsalted butter
Gradually add and beat on high speed until light and fluffy, 3-5 mins.
1 1/3 cups sugar
Whisk together, then gradually beat in, taking about 2 mins.
3 large eggs
1 teaspoon vanilla
Add, 1 to 3 teaspoons red food coloring with the first batch of buttermilk
Beating at low speed, add the flour mixture in 3 parts, alternating with buttermilk
1 cup buttermilk
Grease 2-8 inch pans
Bake at 350 for 25-30 mins.
Butterscotch Cake
Take your basic white cake mix (I know i never like to cheat), follow directions on package. Add one package of butterscotch pudding mix.
Bake based on package instructions.
I used my plane pan for this recipe but you could easily use this recipe for cakes or cupcakes.
Raspberry buttercream
I use my standard buttercream recipe but instead of using water as the base, i put in a package of fresh or a cup of frozen (first thawed) strawberries.

Naomi's Garden

This was made for a co-worker who is unable to eat wheat. It is a Glutten Free Chocolate cake, covered with icing sugar and Fondant made flowers. This was my first attempt at making a glutten free cake so hopefully it tastes good.

Ingredients consisted of Almond Flour, 7 Eggs, Butter, Chocolate, Brown sugar, White sugar and vanilla.

Easy Peasy Lemon Squeezie!

I've been testing out my flavors for the wedding cake i have coming up in October. Last week i did a lemon cake w/ lemon buttercream. I did however forget the fruit in the middle but that is easy to remember for next time. It doesn't look pretty as it was just a tester and the final results! Everyone was impressed, even myself. I took a vanilla cake recipe i had and added Fresh Lemon juice instead of Vanilla and used Lemon shavings from the actual lemon. As for the buttercream, i made my standard buttercream recipe but used fresh lemon juice instead of the vanilla and the water to give it that thin consistency. The only problem i found was the buttercream was too thin so i may have to not add so much lemon juice to get the right consistency.

Fondant Figurine

I took a class last night by a wonderful teacher who is doing private classes, (The Cake Tutor) and last night's class was to learn how to make a Fondant Figurine. I was so impressed with all the details she teaches. I attached a back view of the hair and jacket and the front view!
