The Heinz Ketchup Cake

I was trying to figure out how to decorate the Heinz Ketchup Cake. So i figure since it had ketchup in it, why not make the cake to reflect a burger and fries. The icing on the cake and between the layers is cream cheese with fondant on the outside. The burger is lemon cake (buns) and the pattie is chocolate cake. ketchup and mustard are fondant as well as the sesame seeds on the bun. The fries holder and ketchup bowl is made out of gumpaste. The french fries and ketchup are out of Fondant.

Oreo Cupcakes

I made these cupcakes as we were going to a friend's house for dinner. Some of the cupcakes are oreo flavored with brown fondant and blue and yellow dots in fondant. The ones with the blue icing are extra batter from the Heinz Ketchup cake recipe.

The commemorative cake from Heinz tastes much like carrot cake and makes 12 servings.
2 cups (500 mL) All-purpose flour
2 tsp (10 mL) Baking powder
1 1/2 tsp (7 mL) Ground cinnamon
1 tsp (5 mL) Baking soda
1/2 tsp (2 mL) Each ground nutmeg and ginger
1/2 cup (125 mL) Heinz Tomato Ketchup
1/2 cup (125 mL) Water
2 tbsp (30 mL) Red food colouring
3/4 cup (175 mL) Butter, softened
11/2 cups (375 mL) Dark brown sugar, packed
2 Eggs
6 oz (175 g) Brick-style cream cheese, softened
3/4 cup (175 mL) Butter, softened
1 tsp (5 mL) Vanilla extract
4 cups (1 L) Icing sugar
Preheat oven to 350 F (180 C). Grease two, 9-inch (23-cm) round cake pans and line the bottoms with parchment paper.
Stir the flour with the baking powder, cinnamon, baking soda, nutmeg and ginger into a bowl. Stir the ketchup, water and colouring in a separate bowl. Set aside.
Beat the butter and blend in the sugar in a large bowl until smooth. Beat in the eggs. Add the flour mixture and ketchup mixture. Beat on low, scraping down the bowl as needed, until combined. Increase the speed to medium-high and beat for one minute.
Divide the batter evenly between the prepared pans.
Bake for 30 minutes, or until the centre springs back when touched lightly.
Cool the cakes for 15 minutes before turning onto a rack to cool completely.
Frosting: Beat the cream cheese, butter and vanilla on medium speed for 2 minutes or until smooth. Gradually beat in the sugar on low, scraping the bowl as needed. Beat on high until fluffy.
Frost between the cake layers and over the sides and top of the cake.

I've been in the mood to bake and why not make cupcakes. They are easier and always fun!

The first set are rainbow looking cupcakes filled with chocolate ganache, covered in buttercream and Fondant flowers.

I love spring....and bright colors!

So i decided to make cupcakes today as the weather was gorgeous and i love baking when it's sunny outside. Crazy as it may be, i do, especially when i get those couple of hours to myself while the little one has her nap. :D The cupcakes are vanilla flavored with butter cream icing and most toppings are fondant and some are royal icing flowers.

Princess Maddison

So i attended a baby shower on the weekend for a friend who just had a gorgeous baby girl named Maddison. I offered to make the cake and i had full control on the design and I'm very proud with how it turned out. The cakes were vanilla with vanilla pudding and buttercream icing. My friend who was holding the shower wanted a simple flavoured cake.
